ABSTRACT
The objective of the study was to determine the effect of age, genotype and sex on the chemical composition and physico-chemical and sensory properties of breast muscles in broiler chickens. No significant effect was observed of theses variables on chemical composition and physico-chemical properties of chicken meat. Only meat juiciness decreased with age of bird. Meat of female chickens had less fat and more total protein, water-soluble protein and non-protein nitrogen compared to X hybrids, whereas meat of the latter had higher pH1 and pHu values, was lighter, and showed higher water holding capacity and higher thermal shrinkage.
